Zucchini Hash

3 ears of fresh corn

1 cup fresh zucchini, small dice

1/2 cup chopped onion

2 tbs. olive oil

2 tbs. butter

Kosher Salt

Fresh cracked pepper


Remove kernels from corn. In medium size skillet, heat oil and butter.  Saute onion until translucent, add corn to skillet, season with S&P and cover for 5-10 minutes to allow the corn to cook through.  Remove cover and add zucchini, toss together with corn, heat through for about 3-4 minutes.  I like to keep the zucchini tender crisp.  Taste for seasonings, add S&P if necessary.  Serve.IMG_3680
